A great day for staying inside

It is -25 degrees outside right  now.Brrr! It has been so cold opening the door for the dog to go out. It seems like she wants to go out about a hundred times a day.(But, we love her anyway.)We had to turn up the thermostat,too.(not good for our fuel costs)  :(
I did bake a pie today. It helped a little with warming up the house. It was a sweet potato pie.My first time trying one. I did not like it. It was very basic and very bland. If anyone has a better recipe,let me know and I may give it another chance.
I also watched two movies tonight: Letters to Juliet and Hallmark's November Christmas.Both were pretty good, kindof made up for the disappointing pie somehow.
I  had my dh mail out 3 packages today: 2 ornament swaps and 1 Christmas box swap. Swaps are such a blast and I am glad that I am able to be a part of them with wonderful ladies across the U.S. and beyond.
I have been debating whether or not I want to send Christmas cards out this year because we are moving and I don't really want to mess with that.Maybe a few to my parents,siblings, dh's mom...IDK
Tomorrow, I really need to get some more packing done and maybe bake some more if it's going to be this cold.Maybe some cookies or maybe I'll just make fudge..IDK...we'll see....

Simple Thanksgiving

Yesterday, it was just our family of 6 enjoying our Thanksgiving meal.Next month we are moving.Then we will be much closer to family.We may even get there in time to celebrate Christmas this year with them.We didn't make much this year to eat.We just really were not in the mood.We had turkey,chicken dressing,rolls,tortilla pinwheels,chocolate chip blondies,rolls,corn and pumpkin pie.
I still have the Macy's parade waiting for me to watch in my recorded shows.
We have lots of packing to do over the next 2 weeks.It is disappointing that this will be our last holiday in Alaska but at the same time it will be nice to be near family again.We have lived here for 4 years and never thought we would leave but I guess plans change.Oh, I have so many mixed emotions.
We don't know when we will get there but won't have our Christmas celebration until we do.
We don't even know what city we're going to be living in or what house we'll have.My husband will be looking at houses and choosing one for us.I pray that he will do this with the Lord's leading.I pray that we will get the home that HE has chosen just for us.

Today in our "school"

Today we :

Began reading a story about King Tut, learned how plastic blocks are made(I have 2 Lego fans), and discussed how many people are without the Bible and are "Bible illiterate"(term coined on today's 700 Club).One man on the program's clip said there is more than one way to the Lord. This makes my heart sad that he is without the truth.(along with so many others I've been hearing of lately)We also discussed that many children don't know the Lord either.There is a "new" program coming out in 2011 called "Superbook". My 9yo wants us to contribute to the ministry to get the first DVD. We probably will and he is really excited about it. I told him this helps others to get to see it around the world. He's happy about that.We also prayed that those people without the Lord,will come to know the Lord and accept Him into their hearts as their personal savior.

For PE,my 9yo did water bottle bowling(with a REAL bowling ball!) and also exercised with a medicine ball.

Since I am in a holiday mood,we are also going to watch "The Little Drummer Boy",too.

Beef Enchiladas

1 lb. ground beef
1 lg. onion
1 pkg. taco seasoning
1 (16oz) can diced tomatoes and juice
2-3 T. flour
1 sm. can cream of chicken soup
2/3C. milk
flour tortillas
shredded cheddar cheese

Brown ground beef and onion. Drain. Add taco seasoning, tomatoes and juice, and flour. Take uncooked flour tortilla and spoon a heap of mixture onto shell. Add a handful of cheese and roll tightly. Repeat. Lay back to back, placing tightly together in greased 9x13" baking dish.Cover with cream of chicken soup mixed with 2/3 C. milk. Add heaps of cheese on top(about 3C. total for entire recipe)Bake at 350 degrees for 40-45 minutes, uncovered.If you want more of a "wet" style enchilada, then cover.

Spiced Butternut Squash Soup

This is a yummy and comforting soup.
2 medium butternut squash (about 3 pounds each)
2 large onions, sliced
1 tablespoon olive oil
1 tablespoon butter
2 cinnamon sticks (3 inches)
2 tablespoons brown sugar
1 tablespoon minced fresh gingerroot
2 garlic cloves, minced
3 cans (14-1/2 ounces each) reduced-sodium chicken broth
2-1/4 cups water
1-1/4 teaspoons salt
1 tablespoon minced fresh parsley
Directions
Cut squash in half; discard seeds. Place squash cut side down in a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. Bake at 400° for 40-50 minutes or until tender. Cool slightly; scoop out pulp and set aside.
In a Dutch oven over medium heat, cook and stir onions in oil and butter for 2 minutes. Add the cinnamon, brown sugar, ginger and garlic; cook 2 minutes longer or until onions are tender. Stir in the broth, water, salt and reserved squash. Bring to a boil. Reduce heat; cover and simmer for 10 minutes.
Cool soup slightly. Discard cinnamon. In a blender, process soup in batches until smooth. Return all to the pan and heat through. Sprinkle each serving with parsley. Yield: 12 servings
